late lunch-early dinner

We were feeling something light the other afternoon and decided to keep it simple for an extremely late lunch/early dinner. If you wake up around 12-1 PM you kind of miss breakfast and lunch... We were also trying to avoid dining out. Sometimes it's easy to do with nothing in the fridge and hungry stomachs. Here is what I came up with!

Salade for three:

2 avocados

1 1/2 cups cherry tomatoes

fresh grated parmesan

balsamic vinegar 

lemon juice

Chicken: Season with flour, salt, pepper, and dried parsley. Cook in skillet with a few tablespoons of olive oil.

Serve with a piece of toast and you have yourself a healthy meal!
