surf & turf dinner party
My last night was a blast! Having friends over for dinner is always a great time. The guys were sent out to grill the steaks which was greatly appreciated (I'm not one for grilling but should definitely learn). The photos of the night were a bit rushed but everyone had nice things to say about the taste. I doubled the recipe for the risotto, making some with lobster and some without. Doubling the original recipe was a perfect amount to serve 8, hardly having any left-overs!
Menu:
Arugula salad with cherry tomatoes, roasted pine nuts, & goat cheese - balsamic vinaigrette.
Filet Mignon & Pan-seared Haddock with lemon-panko bread crumbs.
Lobster & Vegetable Risotto
Fudge Pie served with Mint ice cream, dark-chocolate bark & homemade whipped cream.
