chili and cornbread: great dinner

3 lbs. ground round

2 T. vegetable oil

2 onions, diced

1 - 2 green peppers, diced

2 cans light red kidney beans, drained

2 large cans tomato puree (30 oz.- Hunt’s brand)

1 16 oz. can tomato sauce

2 cans petite diced tomatoes

5 – 6 T. chili powder (more if desired)

1 ½ tsp. salt

3 bay leafs

4 T. ground cumin (more if desired)

Paprika to taste

Cayenne pepper to taste

Directions:

Brown meat in oil; add chopped onion and diced pepper and sauté until soft. Add rest of ingredients. Cover and simmer on low 1 ½ hours, stirring frequently so it doesn’t burn on bottom of pan. Freezes well.

Serve with sour cream, shredded cheese, chopped scallions and Fritos. Beer is usually a good choice of beverage!
