One Sunday a year, since I can remember, my mom wakes up extra early and spends all day in the kitchen making Ensaimadas. The tradition started before I was born with my parent's Filipino neighbor in Manlius, NY. Their neighbors would cook authentic Filipino cuisine every day and one day taught my mom to make these heavenly treats. Thank goodness she did, because they are delicious! 

Last week, I decided it was my turn and I recruited a few friends to assist me on my first ever solo Ensaimada journey. Definitely didn't realize what I was getting myself into... Tip 1: Actually start in the morning, not at 1pm with Mimosas in hand — Tip 2: When the instructions say "let rise for 1.5 hours" don't make it 2.5 because you decide you're hungry for Ethiopian & head out for dinner. Let's just say yeast is a powerful thing! Although I can't say I did everything right, they taste just like I remember.

9+ hours later, we had ourselves 64 tasty Ensaimadas.
