Trying to use everything in the fridge, we decided on home fries, scrambled eggs and toast for a late breakfast/brunch. We had just the right amount of new potatoes left. Just like our scarce amount of burners... we only have one skillet. I prepared the potatoes in the skillet and used a sauce pan for the scrambled eggs. We were all a bit concerned but they ended up cooking through (with a lot of stirring).

I semi-followed a recipe on Cook's website but since we only had the basics I had to do a little improvising.  It said to have the potatoes cooked and chilled for atleast 8 hours. In that case, I'd recommend making these if there were leftover potatoes from a night or two before in your fridge!

Directions:

- Saute the onions in a few tablespoons of butter and season with salt and pepper. Cook until they are coated and cooked through (10 min or so), place to the side in a bowl. 

- Plop in a tablespoon, or more : ), of butter and 1-2 tablespoons of olive oil into the skillet.  Cook the potatoes, seasoning them with salt and pepper. Cook until they look like average homefries... (10-15 mintues)

- Place the onions bake in the pan. Add salt and pepper to your liking!

As you can see... it was pretty improvised but with the right ingredients, it is hard to mess them up! Enjoy.
